Cocktails – very trendy in the roaring 1920s – came back into vogue following the film ‘Cocktail’, starring Tom Cruise, in 1988.
The film, which grossed $171 million at the box office, told the story of a New York city business student who takes up bar- tending to make ends meet.
Suddenly being a bartender became very trendy – and among those to follow in Tom Cruise’s shoes was Rohan Wingham who taught himself how to make all the most popular cocktails made famous in the film.
In fact, Rohan, 25, wasn’t born when the film was released but he has worked for the Collyns family since he was 16, learn- ing all aspects of the hospitality trade.
The Collyns – Robin and Angela and sons Ben and Tom – run the Pilot Boat in Lyme Regis, one of the town’s most popular venues for cocktails.
To celebrate the new decade, the bar staff at the Pilot are running masterclasses in which Rohan demonstrates how to mix and shake some of the more popular cock- tails available.

The cocktails available at the Pilot Boat, which cost £8 each, include the following: Bloody Mary, Espresso Martini, Moscow Mule, Vodka Martini, Blackberry Bramble, Gin Martini, Dorset Fizz, Strawberry Col- lyns, Smoked Scotch Old Fashioned, Mo- jito/Spiced Mojito, Dark And Stormy, Tropical Twist, Bellini, Mimosa, Pimm’s Fizz and Aperol Spritz. Non-alcoholic options (mocktails) are also available on the menu.
